On any given day of the week, it is impossible to go to a bar without seeing a few large balloon glasses adorned with fancy extras like rosemary, pink peppercorns or cucumber. With its botanical flavours and citrus undertones, it is easy to understand the Ireland’s love of the G & T. Last year, spirit sales topped £1 billion, indicating that gin is taking over the distilled scene, and with lots of local producers, Ireland is ahead in both quality and selection.

This week’s Irish Gin & Tonic Fest aims to celebrate some of the country’s finest gins through special events, workshops and of course, samples. To celebrate the occasion, our Suesey Street mixologist has shared a recipe for one of our favourite gin cocktail: The French 75.

The classic prohibition cocktail combines gin, lemon juice, simple syrup and prosecco, and is perfect for those days where you are wanting to toast to a special occasion, or just a Friday night!

Suesey Street’s French 75

Ingredients:

35 ml Drumshandbo Gunpowder Gin
15 ml lemon juice
10 ml sugar syrup
Prosecco (to top up)
Lemon zest

Method:
Pour the Gunpowder, lemon juice and sugar syrup into a cocktail shaker, fill with ice and shake. Strain into a champagne flute and top up with prosecco. Garnish with lemon zest.
