Glandore’s Pancake Tuesday Recipe

Born out of a desire to use up any household ingredients before Lent, Pancake Tuesday is celebrated the day before Ash Wednesday, or 47 days before Easter. Today, it remains to be a favourite household holiday across the country, and an occassion that all our Glandore Members look forward to. This year, we are celebrating with over 1,000 pancakes across our Dublin and Belfast offices!

If you are looking to make your own pancakes at home today -or any day- one of our Glandore Members has shared her family-recipe with us. Whether you prefer Nutella or lemon and sugar, these light and fluffy pancakes are perfect with any toppings!

Pancake Tuesday Recipe

Serves 6

Ingredients

Pancake Batter
110 grams plain flour
280 grams milk (1/2 a pint)
1 egg
Pinch of salt
Butter or oil for cooking

Additional Toppings
Nutella
Bananas
Maple Syrup
Lemon & Sugar
Maple Syrup
Whipped Cream
Fresh Fruit
Method

Pancake Batter: Sieve the flour and salt together in a large bowl. Create a well in the dry mixture, and crack in the egg. Gradually add the milk, and gently whisk until incorporated. When you have a smooth batter, set aside and let rest in the fridge for at least 30 minutes.

Pre-heat a large frying pan on medium- high heat. Add a knob of butter or drizzle of oil to the pan, and allow to melt. Give the batter a quick stir, and laddle or spoon the mixture into the pan, tilting it so the batter spreads out evenly in a thin layer. Once the pancake is lightly brown, flip and wait until both sides are cooked through. Repeat the process with the remaining batter, and serve hot with any of your preferred toppings.
